I'ts easy really; Apply the average damage the waterjet would normally inflict; double it for knockback purposes only, and apply to the vehicles loaded weight. The number of hexes of knockback is equal to 2mph/yard of knockback produced. I would divide effective loaded weight by 5 for 'moving on a level surface' for purposes of the calculation.
