The best advice I've heard so far is to use 4th ed. Lite with the 
settings books you like.  Assuming, as a previous poster already 
mentioned, your PCs (and the GM) have no desire to make use of the 
extensively rewritten rules regarding powers.

GURPS: Space is mostly about designing a space campaign, generating 
(realistic, if you so desire) planets, star systems, aliens.  This 
would be useful book, IMHO, regardless of what game engine you are 
using.

The other books you mention (GURPS Infinite Worlds, GURPS Traveller: 
Interstellar Wars) I haven't read, but if they're mostly setting 
material, they should stand alone pretty well too.

Besides, how bad would it be if you bought the three you like, decided 
later you wanted the additional detail with regards to character 
design, and ended up buying the the core books?

I do recommend making the switch to 4th ed..  Since (it seems) you plan 
on running PCs that are low on the extra bells and whistles, I think 
you'll find 4th ed. simpler and more streamlined.
